This weekend is Summer Sausage and Pepperoni Snack Sticks

So the Summer Sausage is Ugly but Delicious. I cut open one with cheese in it and the cheese made it, so we had a fat out. It wasn't a total fat out as its not dry and damn tastey.

I pulled the casings off all of then and wiped/scraped the fat that collected on the outside and then vacuum sealed them. They are presentable enough for my family.

They look good man 

  I was wondering how the cheese would have melted... Your smoker must have gotten just a wee bit hotter than you thought - at least you only had a small fat out & didn't dry out the SS after all the work & time invested
