A 7lb bone in butt and a 4lb chuck. SPOG and 275 with post oak. This is about 170, before wrapping with paper.

Got a good bark, and both pulled right apart.

Chuck has become one of my faves. Easier to find than brisket, for me. No trimming needed, just remove from the packaging and dust with spog.

Nice colour & bark on those pieces. I can get chuck here and will give it a go now Ive seen that.

In regards to that bark, how thick do you put your SPOG rub on?

I mix it pretty evenly, by volume. I think I used about 1/2 cup on those two pieces.
