I came across this article in Texas Monthly online. And it's not like the thought of those Texas Pitmasters slow roasting for our benefit!

Even for me, dye-in-the-wool 'Q-er that I am, I dread standing in the open air, exposed to that brutal sun on my back... all to make a turkey breast yesterday and ribs later today. I can't imagine what it's like if this was your job!

You gotta give ‘em credit for being able to turn out exceptionable ‘que in those conditions! I know it can get mighty warm in my hotbox of a patio during the worst of the summer. But I can at least retreat to my recliner under the AC and watch everything via my remote therm. Can’t imagine being in 130 degree pits for hours on end!

Heat was a driving force in me getting rid of my SQ-36 offset. Always kind of cracks me up when folks talk about the Texas heat, really? This was from under my covered patio before we had the spritzer system installed. RAY

An old fat guy from the North would never make it thru a day there.

I'm sure it's hot, but like those poor fella's laying asphalt in the middle of the summer. You get used to it. That's one hot and smelly job. At least BBQ smells good.

I worked in a boiler room when I was younger, everyone was required to drink a provided electrolyte drink every hour on the hour. I did it for 7 months and quit out of the blue one day on my way to work. I just turned around and drove home, called the boss and said I wasn't coming back.

I will have to say, in my 7 months it never gets any better, I still suffer from heatstroke at the drop of a hat because of that job. Those were the worst 7 months of my life, and I was in my prime at 20 yrs old.

Screw the heat, there is no reason they can't run at least a few window AC's in those sheds.

You have to be prepared for the heat Chris, pool, spritzers, AC running 24/7 for months on end, $500/$700 utility bills. Union carpenter putting up roof screens on a commercial building during the summer months was great practice for being here, brutal.

We went to visit my wife's grandmother in St.Louis a few years back, and I'll swear on a stack of Bibles that I was sweating while taking a cold shower.
