Hot & fast Brisket point (freezer clean out)

Had to start making some room in the freezer. Found a brisket point from a beef we got awhile back.
Decided to go hot & fast with this one.

Started the MB GS @ 300ºF and had the brisket on at 9:00am. ( plan was to start at 8:00 by things got in the way.) I let it roll for a bit, then probably around 1:30ish, I did a foil boat in the pan with all the drippings and trimmings. I only partially covered at this point. I dropped the temp down to 275ºF as I was moving along a little too good.

Let it rest for about an hour maybe hour & a half.

This came out phenomenal. I really like that the whole cook was about 7 hours vs all night.

That looks perfect! Now I have to go hang my head for the day. Is that sausage gravy on the potatoes?

Thanks, just a white gravy the Mrs whipped up... no sausage
