Thermometer stem size fro smokehouse/fridge

I have a thermometer that has a 3" stem. Can I use that for the temp inside the fridge or do I need a longer one?

If not much is sticking out I would get one with a longer stem

It should be fine. You may have hot and cold spots but you should find them and use them to your advantage. Remember to do a boil test to see if it is correct.

The whole 3" of the stem sticks all the way out. Maybe 1/2" more.

What would you recommend?

Well, I just remembered that I ordered the Maverick 733...or whatever it is called! I still want a dial thermometer too.

Do you know how to calibrate a thermometer with 3" stem?
