Hello friends!

So far, I've shared with you a few recipes of local Colombian Sausages. Today I'd like to attempt a tribute to an American Dish that we enjoy a lot at home; The Bacon CheeseBurger. I have tried to be as conservative as possible, but if there is something blasphemous in my approach, please let me know...I apologize :emoji_joy:

Buns are homemade (brioche-style).
Sauce is also homemade secret burger spread
Mild Cheddar slices
Roman lettuce
Beef is about 80/20

PD: I've also attached other versions we made without vegetables and with grilled onion.

Am I following the right path?

As a full fledged, beer drinking, whiskey sippin, flag waving fool, I only have one thing to say. Where do I line up??? I would destroy each and everyone one of them with a side of sausage. Looks incredible sir. The buns look like they done even need a burger.
 
That will do pig. line from an american movie.
I would add grilled onions, grilled jalapenos, and tomato to the mix for a loaded burger.
The American love affair with a burger is now a cultural thing.

This is the way. When I make a bacon cheeseburger or get one out, I'm strictly a mayo, lettuce and tomato guy. Heavy on black pepper and salt applied directly to the tomato (also applicable on BLT's

BUT - my only hard and fast rule on bacon cheeseburgers is no mustard, no ketchup, no pickle, no raw onion.

But this one, this one with the onions (cooked are always muy bien) I would break every commandment to enjoy. I love it.

Someone posted meatballs last week, and I'm still working though a 3lb batch I made in their honor, but when those are gone (I'll end up freezing some, 3lbs of meatballs with all of the onions and mushrooms I added to the sauce was a little much for one person LOL), I gotta have 2-3 bacon cheeseburgers. Got 2 slabs of belly bacon resting in the fridge right now ready for the slicer Friday or Saturday.

Side note, indaswamp indaswamp I pounded many a bunless BCB (I always made a mayo/avocado spread for mine) on keto. Thinner slices of tomato per burger were my key, I love tomato and a nice sized one can have 6 or 8 carbs in it, so I went thin and made it last 2 days. Avocado with mayo or sour cream also makes an excellent topping for everything from eggs to steak.

No seriously- they look great!!!
One of the cruelest tortures of being into Keto (I sometimes get into it) is that of eating bunless hot dogs and burgers, patacón-less chorizos, fries-less steak.

It is an interesting phemomenon how American style fast food has influenced Colombian fast food or (giving it a twist) how fast food makers made their own interpretation of American fast food and created the "Core" of Colombian-Style fast food. You can find from mediocre shadows to very well crafted dishes...ever heard about Salchi-papa?
