After seeing gmc2003 gmc2003 's chili post the other day I got the jones... bad...

So I made my World Famous, Internationally Known and Awesome Tasting, Ultimate Chili.

In order of appearance:
4-strips of HEB better Than Good bacon / crisp
6-cloves garlic / smashed / well browned
1-1/2 yellow onion diced / sauteed until translucent
6-lbs of HEB Choice Angus chuck / cubed / well browned
9-tablespoons Pecos Valley Spice Company chili powder / red / hot
1-1/2 teaspoons Pecos Valley Spice Company Mexican Oregano / ground
1-1/2 teaspoons Pecos Valley Spice Company Cumin / ground
About 4-cups of filtered water

Everything in the cast iron Dutch oven @ 12:30 PM

I just woke up - it's 3:40 AM - and I could not resist heating a small bowlful in the microwave...

Damn I love chili - plus it definitely improves after an almost overnight rest in the fridge. I was almost going to add some canned tomatoes while it was cooking yesterday, just for a little change-up, but I am glad that I did not.
 
Dang, Now I'm gonna have to whip up another batch. Looks Good RS.
