I've had so much fun with a damn charcoal grill. I guess simple minds don't require much stimulation 😆

I did the vortex ribs again last week but unfortunately I've learned you can cook them too fast. At least the flavor profile was on point. $1.99/lbs on sale so I will probably recover for another try!

In laws are here for the week and we decided on burgers last night. I hit the innerwebs looking for ideas and BOOM! Reverse seared burgers!

Who ever thought of this is my hero! I placed the patties on the grill (seasoned with Mo Cason Beef Rub) & put a chunk of Cherry on the coals. Covered and smoked for about 5 minutes. I chose to sear 3 at a time. Once they were all seared to various levels of char I gave them another 5 minutes covered so they all reached a temp of 160 prior to pulling them off. We had some collateral damage because I did drop a pattie through the grate but Willy, Daisy, & Mookie appreciated the snack!

The burgers were on point! My in-laws think I'm Wolfgang Puck or something.

Looks to be some good eating. My Kettles are the most used cookers on my patio. I've been doing the smoked burgers with brisket patties I ground myself. Carne asada tacos from flanken cut beef rib last night. Wing using a vortex last Saturday.

Hard to beat a Kettle.

Over at Amazing Ribs, Meathead says grilling the individual ribs reduces the done window greatly. Says easy to over cook. Because they can lose moisture from all four sides, rather than two sides when part of a rack.

Yes sir those ribs get done quick. Amazingly enough we ate about half of em. Never stop learning.
 
Looks great from here Randy. My first and only attempt at Vortex ribs didn't turn out very well either. I overcooked and after saucing them I left them on too long to set. We couldn't bite them had to use a knife to cut the meat off. One of the only cooks that my wife was disappointed with.
