I think I accidentally made the perfect brisket yesterday. It's been a few weeks since I smoked something, and I just had to get a brisket and butt going before I went insane. The butt was good, but not as good as some I've made. The brisket on the other hand, was so very fork-tender, and it didn't come apart when you picked it up. It cut like butter! After collecting and cooking the juices down, it had just the right flavor....could drink it straight up it was so good. The combination of the meat and juice was like Nirvana! I'm not sure if I could do it was a fluke I'm sure....but I definitely need to experiment more!

Some of my best stuff started out as a what the heck experiment. The hard part sometimes is remembering to write it down so you can repeat it later.
