Tonight I fired up the mini-wsm, notice a trend? It's never too cold or hot to smoke or bbq! The last couple days we've had a high of 70, low of 30.
The last couple of smokes when I've ramped up the heat I've been getting a bunch of condensation from the meat dripping on the heat deflector. That creates steam and turns the TBS into sorta steamy TBS. It's not the yucky white stuff, but not TBS. At the temps below say 275* it's not a problem. Above it is. So I am thinking that for higher temp smokes, that the heat diffuser needs to be removed to allow the moisture to drain and not cause the steam. Just thinking out loud. On to the Q-view!
Used up a store bought poultry rub I received for Christmas.

Ready to pull. Darker than usual. That's not just smoke, it's steam... Very strange. Darkest bird I've done in the Mini!
While the chicken was smoking I boiled down the trimmed pieces and the neck to make stock for gravy. Simple recipe, 4 cups stock, 1/4 cup starch.
MMMMM!!! I like my mashers with garlic and the skins left on, just makes sense!
Nice and moist, no brine, no injection, of course today it was a steam bath in the mini!
