The laziest of cooks - pit fajitas

wife picked up some nice inside skirt from Kroger for $6.99/lb the other day and wanted it for dinner last night. The problem nagging me was I knew with the high wind lately my kettle had been blown over and needed a full bath inside and out before I could use it. Not conducive to a quick weekday meal.

Oh wait! I have this thing called a pit, I haven't put food on it in a few years, it's been relagated to camp fire action but I sure do enjoy grilling on it and it's as easy as it gets. Problem averted.

Seasoned with Fajita Rojo.

This pit is a fajita machine, with a full bed of coals I can push out 30lbs of fajitas in probably 20 minutes. Been meaning to get a extra large electric rotisserie for years... one day.

Has a swinging rack, manual rotisserie, and pot hook. I fashioned a cooking hood for it out of a extra large SS bowl and cabinet pull from Lowes.

nothing mo' gooder than scoring a deal on decent skirt. That looks real good.
 
I hadn't thought about a free standing rotisserie for the pit, that's actually a good idea. Thanks for bringing that to my attention.
DC powered so it can be run off battery. So it only needs open fire.
 
Love skirt steak, only problem is usually when I make it the meat doesn't get to the tortilla as it is just slice and eat.
No need for a clean grill if you roll like Alton Brown. Good bed of quality lump charcoal and go caveman style. I am yet to try this myself

I have thought about it many times but can't bring myself to do it. I usually try to keep the ash off the meat. I've watched Alton do that a few times. While I'm sure folks have gotten good results from doing it, I tend to think it's more for the wow factor than anything else... or because you just don't have a grill. I'm betting I could weave a grate out of wet wood, in fact somewhere I have a book that discusses that.

I'll get up for work at 6:00am and find our daughter in the kitchen eating the fajita meat. I grilled 2 of those skirts and got 2 tacos out of it....
 
Very nice, I think I would have just taken the whole cutting board for my plate and ordered pizza for the fam....LOL
Beef fajitas are every ones favorite, that just wouldn't fly or I would. It's like trying to keep ice cream in the house. Dad can't have nice things....

I miss-spoke, was from Albertsons and yeah, I normally pay $9 or $10 a pound so this was pretty good. Thing with Albertsons, only buy the meat that's on sale, get there on day 1 early and then run. There's a guy in town that goes and gets a grocery cart full of whole packers when those go on sale. With a thousand gallon smoker in tow!
