Well we are having a baby shower this Saturday. I am smoking 3 Brisket flats. all around 10#'s.. feeding 25+ people. my question is A- Do you think this is enough? and B. I have never done flat's only. what's an avg per # cook time. I am planning on 1-1/2 hr's/lb... is that safe? I'd rather get it done early and let it sit in a cooler for 2-3 hours than rushing. Forgot to add, I will be wrapping in butcher paper @ the stall

Hi Tex, if cooking at 250* it will probably take about 4.5 to 5hrs to reach the stall. After the stall it's strictly a monitoring game. I foil flats to power through the stall, and when they reach 190ish I start probing for tenderness. Remember if their done early and your going to store them wrapped in a cooler under blankets to keep until dinner. Let them cool down to 170* prior to putting in the cooler. Let us know how it goes - best of luck. All cuts of meat are different and reach their final destination when they feel like it. I'm sure others do things a little differently then I do and they'll chime in.

First off congrats on the lil one, it will be an amazing time in your life, and goes oh, so quick

On to the meats, usually low, and slow is the preferred method to smoking beef. I've done a few packers that took 14-16 hours. never did a flat though. 30# in a smoke is a lot of meat, so expect it to take longer due to volume. Only advice is get this stuff done ahead of schedule, and make time to attend the party, last thing you want is being out working the smoker and the pressure of getting things done on time, and frustration when it doesn't. Start tomorrow if you can. I'd figure 1/2 pound of meat per person with sides. you'll lose a some weight in the cooking process. should be enough I think
 
Thanks for the Congratulations.. it's actually our 2nd little one! And it's a girl, god help me if she's like her mother haha j/k... I've thought long and hard about doing it the night before, but with no experience in doing that I am a little hesitant. We are planning on eating around 2pm. I think I am going to start it around 12-1am.. no pressure.. just feeding 25 people lol
