Thanksgiving Turkey, how long in the smoker?

Matt at Meatchurch says about 3.5 hours for a 20lb turkey.....all the other recipes I see online are roughly 30 minutes per pound. Huge difference here so what gives? FWIW, I'm gonna Spatchcock for the first time too!
 
160-165F in the breast, 175-185F in the thigh. No matter how long it takes.

Poultry and ground meats are the two proteins I always smoke to internal temp.

A spatched 20 lb'er at 325-350F should take roughly 3 hours, give or take. Point the breast away from the heat source to more evenly cook the bird.

The spatchcock will speed up the cook considerably. Plus gives a bit better smoke penetration. Should be delicious.
