Got a 14 pounder for dinner tonight at 4:00.

Just getting started.

Steph bought a pre injected bird so no brine or other injection. I admit I'm a little nervous that this one wont turn out as good as last year....

And done....

The IT on the legs was way higher than the breasts...I think this one is a bust.....

Next year....minimally processed so that I can brine!!!!!

Looks good though...a few strips of bacon added across the top when I inserted the probes.

Bill, don't worry if the thigh portion is higher on internal temperature than the breast portion. The thigh is full on connective tissue that renders out when it cooks. So you should be good. Plus gravy is your friend for hiding dry meat.

Gorgeous turkey!!  As I was reading your post, I was thinking it was a bonus that the legs got to a higher IT than the breast. Glad to hear it worked out!!
