This thanksiving, I decided to try my 2nd Turkey in the smoker.

I had an 12.88 lb turkey that I let brine for about 4 hours.

I then injected it with tony creoles "Creole Butter" injection.

I then rubbed the outside with EVOO and placed plowboys yardbird rub on it and put it in the fridge to rest overnight.

I then fired up the smoker about 5 AM and then around 11:00 was my finished product below. Skin was a little darker than I wanted but the InSide was awesome and that is what matters...


 
That turkey looks awesome, I like the color. You got me thinking about left-overs now... and I just ate breakfast!
