I've got a holiday pot luck coming up, thinking smoking, but reheating becomes an issue, unless I use the microwave here at work. I was thinking of doing an appy. smoked meatballs stuffed with cheese, w bbq sauce (don't know if sauce would be too much and overwhelm the smokiness of the meatball)

I'd go light on the bbq sauce if you end up doing the meatballs, just like any good bbq, shouldn't require lots of sauce to make it good! Just my $0.2

I've got a whole boneless pork shoulder injected and curing in pops brine. I picked up some Transglutaminase (aka Meat Glue) I have been wanting to play with. I'm going to put it back together sans bone and hang in a net bag. Then it will be glazed and smoked. Viola! Boneless ham! There will be apps and sides as well of course.

We always cook a big Thanksgiving Meal. Our #1 son who is working in New Jersey (Tower Crane Operator)
Called the other night and said he and a friend were going to drive straight through to be her on Thanksgiving.
That boy loves Thanksgiving and Christmas Dinners. I asked my wife "You want Smoked or Oven Turkey" She looked at me and said "Smoked of Course" Last year I ended up smoking 3 - 20 pounder's One for us, one for #1 son and one for his wife's parents. #2 son and daughter in law come and eat with us as do the grand kids. May do a Turkey and Ham ??

Thawing out 3 turkeys to put in the curing brine as we speak! One for Thanksgiving at our older son's house, one for my younger son and family, and one for my chiropractor to enjoy!

As always just had a wrench thrown in my plans but what's a holiday without an adventure.

My family is eating Sunday the 19th so Saturday the 18th will be turkey and ham smoking day.

I'm working Thanksgiving Day so work lunch was going to be a second ham I had planned to smoke on the 18th with everything else. Here comes that pesky wrench though. Our local FOP has volunteered to provide lunch ingredients for us since we have to work the holiday which is awesome of them. I won't know what meat I'm smoking till it shows up on Monday though. Good thing I'm off on Tuesday. Tuesday was going to be cheese, pecans, and salt smoking day. Good thing I have multiple smokers.

My plans have slightly changed for Thanksgiving....I was wanting to do a prime rib. But my family as asking for more pulled pork and Tri-Tip. Tri-Tip I normally do on the Santa Maria. I am instead going to tie them up and put them on a spit to smoke them that way. The PP will go on earlier in the same Weber. I think I can get them all done in the Weber at the same time. I should be ok as long as the tri-tips stay tied up.

Things have changed on my end. I am doing two wild hog hams (almost 10 pounds) this weekend and provided they aren't horrible 1 will for sure be for Thanksgiving, the other may be for Christmas.

I also plan to do an injected whole smoked Turkey the day of our Thanksgiving day celebration. It is going to be goooooood!

Here's a cool idea for you from a while back: http://smokingmeatforums.com/index.php?threads/scoops.219803/
These were a hit when I tried them!!

Ok so much for the Tri-tips they will have to stay in the freezer. I am now going to do a bone in New York rib roast for Thanksgiving. Grocery store had these babies for 4.49 a pound. I bought four.

We do our Thanksgiving on Sunday. Got two 13# birds thawing, one for the smoker and one for the fryer. We also have a nice semi boneless ham that will be double smoked Bear Style. Plenty of Q-View to come this weekend.
