Thanksgiving Leftovers Quesedilla

Happy Thanksgiving everyone. I'm thankful for the support so many of you give to folks like me, who are adventurous enough to try new things with food, but need a little direction.

Did a traditional Thanksgiving (on Friday) this year for only 7 people so had a lot of ledtovers.

Decided to do a quesadilla and though I've tried it before this one was really good, and thought I'd share...

Chopped up cold turkey (white & dark).
Reheated stuffing with a generous amount of gravy.
Made an aioli with mayo, capers, chives, parsley and thyme.
Spread cheddar on half of a burrito shell.
Put turkey, dabs of cold mashed potatoes, warmed stuffing/gravy mix and shredded mozzarella on top. Folded tortilla in half and grilled on flat top griddle.
When warmed through opened it up, added fresh arugula and spread aioli into it. Closed it up, cut up and served, dipped in cranberry relish.
