I decided the two big ones I grabbed could just go straight to a smoke bath instead of the freezer. Rubbed them with Arnietex WOW and Nat the Cat Dirt rub. Went hot and fast in the 270 KC Cabinet using B&B char logs and cherry wood chunks. I bought 8 bags of the char logs and this is the first time I've used them. Way more economical than lump and worked very well. Ran hot and fast close to Mixon style. Roughly 3 hours at 300F wrapping around 165ish. Around 2 more hours 300-325 probing pretty tender at 207F. Went into the Cambro for a two hour rest. Overall very pleased with the turbo brisket. Was tender and juicy, maybe a little less smoke than I would like but everyone loved it. Flat is nice and tender and the point is outrageously good. Half of one went to my brother and his friends that share suppers in a community room where they live. Also did a full pan of my keto cowboy beans. Happy to link my old post if anyone wants. The flavor of those two rubs was amazing. Here are a few pics.

All my drop offs are done and clean up over. I'm stuffed from nibbling so no supper needed lol. Thanks for looking.

Hell yea! All looks good! I’m interested in your keto cowboy beans!
Very proud of this recipe. I developed it from scratch and perfected it. People just rave over them whether they do keto / low carb or not. If you make them please do let me know what you think. Recipe is in this link. Cut back on the chipotle by half or more if you want to avoid the heat. https://www.smokingmeatforums.com/threads/beef-x2-and-beans-finished-q-view-added-in-thread.291345/

Those beans are killer and nice smoke on the brisket. I probably should buy one but there is always going to be another sale and nice not having to move it around in freezer.

Bought those at Kroger in Tiffin using the Kroger TX coupon posted in the Kroger thread. Sandusky Kroger works too. Still good today if they still have brisket in stock

Heck yea all around there Jeff. Nice work
thanks

Looks perfect Jeff and solved the problem of no room in the freezer 😆.
Just go ahead and cook it to share with family and friends!

Keith
Thanks Keith, I do love to share food and my freezer is packed lol

I used the Kroger coupon also. Planning on starting the cook tonight and enjoying tomorrow. A choice brisket here is usually running about $4.99 lb. A little less for prime at Costco. But $1.87 is very hard to beat.

Feel free to use the digital coupon code at that Kroger to get them down to $1.87/lb and walk away with some good brisket :D
True, I really dont have the freezer space for a brisket or I would have giggled all the way out of there with it.

Jim

I completely understand! I'm forgoing because I stayed out of town for the last 30 days and put on more pounds than I like since I didn't have my normal situation and ordered out way more meals than normal. If I buy 2 briskets I'll just continue the back sliding so I'm obtaining hahahha. I'll eat plenty of brisket tomorrow and this weekend due to the holiday and a family gathering.
After this Saturday it will be time to get back on the boneless skinless chicken breast to easily watch the calories and start doing some working out to get back on track :D
