Made a
batch of Texas Twinkies. Large jalapeños stuffed with chopped brisket, cream cheese, grated pepper jack cheese, and seasoning. All wrapped in bacon.
Slice a "T" in the side of the jalapeños so you can carefully open it to remove the seeds and veins. Be sure to wear gloves and avoid picking your nose or touching any sensitive body parts.
Smoke the unstuffed peppers for 30 minutes at 250 deg. You can bake them in the oven but I had to listen to my wife coughing in the next room the last time I did that.
Stuff peppers with:
1/2 lb chopped brisket
8 Oz Cream Cheese
8 Oz grated Pepper jack Cheese
A sprinkle of pork rub
This mixture is enough for about 20 "twinkies".
Wrap each stuffed pepper with 1 1/2 slices of regular thin bacon, sprinkle generously with pork rub and smoke at 250 deg for 90 minutes, increasing temp to 300 during the last 15 min.
Slather BBQ sauce and smoke another 15-20 min.
