I miss having good Texas hot link sausage from where I grew up, Texas! We've lived in elk country since 1989. Elk Has replaced beef completely in our diet since moving to Montana. I have made many types of sausage from elk, but not Texas hot links, because we like bulk sausage for breakfast. I made links once before and it turned out good. I have a good recipe for Texas hots, but don't really want to mess with links right now. Has anyone eaten bulk patty sausage from Texas hot blends? If I decide it must be stuffed, I can always do that after trying sausage patties first. What experience do you have using that blend for bulk sausage?
 
Yes. That is correct.
For what it's worth, if your would like to cure the meat (we can get you squared away on that process if you aren't familiar with it) I have been known more than a few times to not bother with making links and smoking the cured sausage I make. It fries up AND grills and tastes absolutely delicious that way.

I just cure the meat, grind, mix in the spices and work it to get the right consistency then I make patties and fry it up or toss it on the pellet grill for a while.

Makes GREAT sandwiches.
