I miss having good Texas hot link sausage from where I grew up, Texas! We've lived in elk country since 1989. Elk Has replaced beef completely in our diet since moving to Montana. I have made many types of sausage from elk, but not Texas hot links, because we like bulk sausage for breakfast. I made links once before and it turned out good. I have a good recipe for Texas hots, but don't really want to mess with links right now. Has anyone eaten bulk patty sausage from Texas hot blends? If I decide it must be stuffed, I can always do that after trying sausage patties first. What experience do you have using that blend for bulk sausage?
 
Yes. That is correct.
You're good . Mix it up . I just did some ground turkey breast with a commercial mix . Adkins farmers sausage . I also have the Adkins East Texas hot link . Both good , and I've done both pork . Makes a great breakfast patty .
