Hello all,

Its been a little tough to find good beef brisket here in Huntsville, AL so I decided it was time to build my first smoker and quit complaining.  I secured a 250 gal propane tank and all the steel I think I need so I've started the build.

Welcome aboard, my Texan brother!  I know what you mean, I moved from Houston/Baytown about 4yrs ago to NC, and it was an eye opener on BBQ.  Not that it was bad, but different, and pork everything.  I'm not partial to pork, but man, where's the beef.   It's not TX BBQ like we are use too, and they probably say that about TX, when they go there.LOL  You can eat our BBQ, and not put sauce on it to taste good.  Again, it is just different.  Well my story is met up with a NC BBQ brother, and started Tex-A-Lina Cookers, the best of both states.  Trying to be different to accomodate both worlds.  This is a Good Forum, and can find just anything when it comes to BBQ!  Will post pics on my pit, or you can look us up on Facebook.  Tex-A-Lina Cookers.  My name is Marco by the way!

Same feeling here about all the pork out East of the Mississippi.  It's good but its not Texas BBQ.  I can't tell you how many times I've ordered brisket here in AL & GA and had to use a knife and fork to slice it into bites.  I think your statement about sauce about sums it up.  Good brisket like a good steak doesn't need any sauce.
