I am doing two turkeys on Thanksgiving - for two different families and I want to make sure the turkey will be on point.

My wife picked up a Butterball and I am giving it a shot - I did one last year that turned out great.  Problem is I didn't write down what I did.  Since then I now have a notebook but I digress.

Turkey is in the brine (salt, sugar, water) since noon on Saturday.  I plan on putting the turkey on the smoke at noon for dinner around 6 PM.  I plan to use cherry and pecan @ 275-300.  Injection to consist  of butter, chicken broth, garlic, mustard and ginger.  I have a rub I am going to put on under the skin.  Lastly I will coat in olive oil before tossing on my smoker.  I am still deciding whether I am going to use the UDS or mini...


 
Sounds like a good plan. I think I'll set back and watch . . .

It's been injected and rubbed down.  Will be getting smoker going here in probably the next 30 minutes or so.
 
I think the mini can handle a turkey.  I will use that.

Invited some friends over to help us eat it.  I don't need leftover turkey in fridge for the next month.
