First time wrapping a pork butt. I usually just let it cook. But was trying to get it done in less then 12 hrs ;)

looks great! whats the weight on that? I do them hot and fast and that cut the time without wrapping.
 
Usually start them at 180 (high smoke on the rec tec) for about an hour or two then turn it up to 275 and leave them there till done. I think they usually go for about 10 hours give or take a couple - you know how they have a mind of their own.

How are you cutting a butt in half? Are you buying boneless or do you use butchers saw?
No, not boneless or sawed, I just cut it lengthwise. One half got the bone the other not. I expected the half with the bone to take a bit longer to finish but to my chagrin it finished same time as the other half.
