temps???

i have had a 4lb butt in the smoker for about 11hrs now and it is still holdin at 154°. I know that the plateau can take awhile but dam this is gettin crazy.

I have 2 prob thermometers and they are both readin the same.
My smoker tems are good at about 235° steady all day.

Not tryin to make this an all nighter as I have work tomorrow morning.
 
That is strange. This may seem like an silly question, but you say your smoker temps are 235? Is the therm for the smoker up higher than the grate in which you food is at? If so, the temps can vary quite a bit. Just wondering.
 
Huh. Man that is weird. A 4# butt should not take that long, I would not think anyhow. Are you sure you therm on the smoker is accurate? Is it the kind that came with the smoker? Not saying that your therm is a cheapo or anything, but allot of times, the ones that come with the units are not the most accurate. Thats the only other thing I can think of. Can you leave one of your probes in the smoker for a bit and see what temp it gets to?
 
Ive had a small one do that to me before. If you insert the temp prob does it go in easy or is there still resistance? also what kind of smoker?

What kind of smoker are you using?
 
using a GOSM and the therm still has a good bit of resistance when pushing it in the meat.

I have one probe in the meat and one on the rack for somker temps.
 
Sounds like you just got a bad butt that is going to take forever. The one I did I cooked for 10 hours and it was tough when i pulled because I turned up the heat to get it to temp and all the connective tissue didnt get a chance to break down. Good luck with finishing it.
 
I should of done a little but when I did mine I jumped like 50 degrees because we were going to some friends house for dinner and the pork was dinner.
 
i had 2 small quickie butts do that to me, i just get the bigger ones now. if i'm gonna burn the fuel i want to at least have some leftovers
 
I too have seen butts go for along time but this one mite just take the cake here. I think i would bump up the temp alittle and try to break that thing myself. Or even take it out and finish it in the oven. I know those are cuse words but sometimes you have to do what you have to do.
 
the butt is now at a wooping 160° i foiled it and hopein that it will break down soon. the smoker is up to around 250° and is set at low.

I put this thing in the smoker @ 10am. You think that it might be because it was frozen and thawed out in the sink rather than the fridge for a few days?
 
Are you shure it was thawed?

I don't know why, but every time I have done little butts they seem to take forever for their size
 
I did 2 8lb'rs today and they took me 15 hours and now I have them set to rest hopefully another 4 to5 hours so I can get some sleep. lol Got my smoker running at 130 and my probe alarms set at 160 to wake me up to pull.
