Taco Tuesday - fajitas

Fajitas are great for a weeknight, especially beef. This was some skirt I bought from a very local, a neighborhood Mercado. We bought 6 pounds a few weeks ago and froze half after tossing some fajita Rojo on it.

Topped with house salsa and sauté veggies.

Just came to me that those tortillas look like flour in the photos. To clarify, they are white corn tortillas. For me it isn't a taco unless it's corn..... mostly :)
