I would give the flavor/smell a 7. The mouth feel is different but for what i did here it works. They are fully cooked so I tried one right out of the pack cold. Honestly I could eat it as a cold cut on a sandwich and be pretty satisfied. Kind of like consistency of old fashioned loaf. Maybe a little more firm. Its intresting stuff thats for sure. It is cured and cooked not fresh and cooked so it has cured flavor and it does have a bit of vinager.
