Taboo Questions

Hi,

Outside of SMF, because everyone here is more than glad to help, I was wondering what BBQ questions are consider taboo out in the wild. I assume that sauce, mop, and rub recipes are held close to the chest, but what about wood choices/sources, times, and temps? The reason I ask is because I was in a deli yesterday where they a had a homemade horizontal smoker going in the parking lot. I told the owner that BBQ is a new interest of mine and I was wondering what types of wood he preferred and where he got it from. He just ingnored the question.

Hmm well, anyone can be tight-lipped about anything- whether it really matters is another can of worms entirely!

I have no compunction about sharing wood choices, temps, and even most of my mop/seasonings. I DO have a rub I keep to mainly myself, but in actuality- it's listed here thruout several posts. Just not in one place ;{)

It was Vlap, I believe- that had a rather good thread on "Secret recipes"- I'll see if I can't find it.
 
I think you will find on this board there isn't really any taboo questions....well about bbq anyway!! Most of us will share just about anything with someone who asks.
 
Most people on the forum here share; whether it be wood choices, rubs, mops etc. It's an individual thing and while deciding whther to share or not is an individual choice, ignoring you was just plain rude.
 
This forum is extremely rare in that most everyone here is more than willing to help out and share information. Even people that do not choose to let go of a "recipe" will be more than happy to point you in the right direction to develop your own. It isnt just smoking that has closely guarded secrets, I have been on countless forums for countless hobbies and they are basically all the same. No one is willing to share anything publicly. Drag Racing is probably the worst I have seen, Crappie fishing would be a real close second.
 
He may have been guarding the source more than anything. If I had a good source for wood I wouldn't divulge that info but I wouldn't be rude about it.

As far as recipes go I share everything. Most folks(except here) don't have the ambition to go thru the process themselves anyway.
 
I was at a party a few years ago and had some kilbasa that was really good. Was grilled with a really tastey glaze on it. I talked with fellow party guest who had made it and complimented him. I asked how he made it and he immediatly got defensive and said there is no way he was going to share it. I kind of laughed and told him ok. This is someone I have never seen since and probably we don't have anyone who we know besides the party thrower. His attitude is pretty much the exact opposite of mine. I cook because I love to eat good food. I also cook because I love to see people enjoying the food I make. I will share anything with anyone who asks. I don't have any blow your mind kind of recipes so maybe it is differant when you do. The only people I know who keep quite a bit of secrets are duck hunters when it comes to their hunting spots here in ct. I understand concidering the amount of good waterfowl hunting spots there are compaired to amount of hunters here.
 
I ran into this same thing recently at a BBQ catered grad party. The guy wouldnt even tell the type of wood used for smoking and his pulled pork wasnt even that good!
 
A lady here at work has a real nice recipe for potato salad and I asked her for the recipe.....she wouldn't give.....but yet her husband works in my department and I share everything with him about BBQ! Go figure....I at times have thought about cutting him off...but I never do.
 
I had a wonderful yellow chilli a ton of years ago at a party. I could not stop eating the stuff. It was regular chilli, but yellow. I think the color was due to melted Velveta cheese in the pot. Midas well have been crack! I couldn't put it down.

I asked for the recipe and of course it was a secret.

i dont mind sharing recipies and i have pm'd members for recipies and have gotten what i asked for everytime. so why would i hold something back when in time others would realize i was taking but not giving,,,,of course i also wouldnt be upset if i got turned down on a request. i know there are people out there like that, specially when it comes to sauces and worst of all... sausage recipies. some people feel the need to not share or just keep in the family and others its no prob...
 
I have heard of this going on at the go cart race tracks around the Big Motor. (I am not a go cart person but had a boss who was into it big-time)

I know competition and all drives folks to be like this. (look at the issue with counterfeit products) But if it is not your livelihood, at least be polite and straight up about why you are holding back. You can help a lot without giving away the farm IMHO.
 
Maybe he was using old skids and didn't want anyone to know!

im by far no expert at smoking meats but i do a pretty good job ive been told.i dont have a secret recipe yet but am more than happy to share what i can of my knowlege .if i ever get a great recipe thought up for sauce or rub etc.. please feel free to ask.i made my first sauce just this past weekend .it tasted ok at first but then i kept trying to tweak it and basically ruined it so any sauce tips would be great for me.
 
Doug...consider using a bit of the defatted "liquid gold" from a larger meat hunk smoke in your sauces. Adds a nice tinge of smoke, and for lack of a better term a "mouth-feel" from the gelatin. Of course, be sure the acid/vinegar content is up there, or use preservatives when using such ingredients, and keep refridge'd. Or..make it fresh for the day!
 
I'll give ya just bout anythin I got fer infermation, only one I'm sorta holdin onta is my "Smoke in the Hollar" rub, but I'd tell ya what was in it ifin yer willin ta work out the proportions, cause rubs like most anythin else is a matter of taste.

See it boils down ta bein in the neighborhood, we all be neighbors, friends an buddies here, so we don't mind sharin. Other folk er to tied up in themselves ta even thin bout considerin others. Let em have there life, we likes it here!
 
That's just plain rude. I can see if he wanted to keep the source a secret since in some places good smoking wood is hard to find, but what difference would it make if he divulged what kind of wood it was? It's not like you asked him for the mop/glaze recipe, prepping tecnique, cooking times and temps etc. etc.

LOL. Or something worse . . . like floorboards from old livestock trailers or something.

I visited a "Q" comp last year where I dared to ask questions of the competetors. Well that went well! No one would share a thing even when I said I wasnt entered in the comp. OH WELL!!

The only recipie I wont share is for my soon to be famous "Smokin Hot Sauce". Sorry....
