Yes, I've seen that version as well... and I saw one where they used like a $15 pink pineapple... which I've not yet found one locally to buy, but I would absolutely try that version too.
Huh, I had never heard of pink pineapple before. Had to Google it.
Looks like it's pretty hard to come by right now. Maybe it'll get more popular. Interestingly, I think pineapples are one fruit that is cheaper now, than when I was a kid in the 60's-70's. I can usually pick one up for $2 and change.

I got mine yesterday for $1.99 ... probably pick up a couple more next week
 
Gave it a shot tonight. Dry rubbed with heavy brown sugar, Korean seasoning salt, black and white pepper, garlic powder, onion powder. Once the rub liquified, added healthy boy mushroom soy. A kielbasa seemed a good replacement for the core. Standard 3,2,1 thinking for this. After the initial 3, foiled with pineapple juice, soy and local honey. Basted with essentially the same for 2 hours, then a baste in its own glorious juices. Great success. Thanks KiloCharlie! A keeper and aesthically amazing,?

You really took it over the top and honestly I think you should create your own thread and make sure everyone sees the upgrades you did! You definitely deserve a ride on the carousel and the attention your creativity deserves!

Does look awesome, and yea, probably the inside of the ribs is going to be a bit pale and unsightly due to being in contact with the pineapple. Still, very interesting idea, gotta give you props on that.

Most impressed with the price of the ribs. Nothing like that here. If I see something similar, I'll be filling a freezer with em.

My freezer is full so picking up morr than I did wasn't an option. I did swing by that same store today and the ribs were back up to $4.49 a pound which brought them back up to double what I paid the other day. I'm going to have to do some reorganization in the event I see another sale like that again!

I saw a similar idea a few years ago, but the pineapple was hollowed out, and then filled with rubbed Country Style Ribs (sliced pork butt.) Never did get around to trying that.

I tried it. Didn't like it. Made the meat mushy.

Judging from the back side of the ribs I did, I can see this happening.

I did like @cpaysonc post above where he stuffed the center with a kielbasa and I'm betting the casing on the kielbasa kept it from getting too mushy.

Decided to de bone one . I tried to get the hock / shank out to cure and missed the cut ,

Ended up deboning it . Hock on the left .

Cured 14 days with TQ , then smoked in the SmokeFire .

Completely boneless . I can't decide if I want to slice it ,,,
or eat it like an apple !!
