Hey guys, i wokeup this mornin and felt  like going to St. louis, but since im broke

  i decided  to smoke up some St.louie syle ribs instead. Im doing one rack St.Louie style and one spare rib rack that i didnt trim down. 

 For the rub i used Tulsa Jeffs recipe, pretty bombdigitty stuff he's got there ! Right now they are a little past the half way point. i just put them in foil because im doing the 3-2-1 method.

I also have some jalapeno peppers stuffed with green onions and mozzarella cheese, wrapped in bacon

im using mesquite chips , next time i believe i'll use chunks instead because the chips burn up too fast even though i soaked them pretty good. i had to keep opening the smoker quite a bit.

I agree about the chunks; chips are useless.  The chunks are also thick enough to burn as coals for a little while too instead of just turning into little blackened croutons.
