Anyone try adding a fan to the top vent on a MES Adventure 30 inch. I'm reading here and there that there isn't enough air flow so your briskets can't form a good bark. I was thinking that I can put a small fan to draw the air up and out the vent. This is so it's not as humid inside the smoker. Thoughts?

I've seen a couple threads on added fans . I think tallbm tallbm did one .
I use a 30 with a mailbox and a PID controller . Mines tuned pretty good . Almost to much airflow .

I've had a MES with the vent on the right and the one I have now has it on the left. The draw with the vent on the left is definitely better.
 
I was thinking some think like this, just to draw some of the air out. I can't imagine you want it be like a hurricane. I suppose it's cheap enough to give it a try.
 
I use a Bradley and the mailbox mod. I don't have quite the airflow that chopsaw chopsaw has, but I set up my mailbox in a similar way and get more than enough airflow.

Hi there and welcome!

I smoke my briskets unwrapped the whole time in my MES40 and get amazing bark so a switch of smoking/cooking process may be all you need if you are wrapping. I never wrap anything before 180F or 190F in my MES and that is limited to wrapping Chucks and brisket flats where I do at like 190F and throw in like an ounce or 2 of water in the foil when I wrap it so it doesn't dry out. The bark is great at that point. I never wrap based on a stall because that drastically hurts the flavor I am looking for.

As for a fan device I made one that works amazing and I use it for cold smoking scenarios only. If it works for cold smoking (no heat, so no draft which needs the fan to help make draft), then it should work for any heated scenario.

Here is the post about it here and I used a fan kind of like the one you posted but way cheaper, smaller, and I used cardboard to make a tube and the fan to blow up the tube. When you place this tube over the MES vent and turn on the fan to blow up, it creates a draft that sucks the air up and out of the MES. Getting a cardboard tube is better than rolling cardboard up like I did in this example. I built one of these for my brother and used a cardboard tube you can get at the post office for shipping rolled up prints and paper :D
