Not like I don't have other stuff to do, but damn needed a break. This week the butcher sent me a big package of Pork steaks (actually 2 big packages). I might cook a couple during the week but no way caould i eat all that.
Also she sent me a HUGE Eye of round roast. I had to use two small ones a couple a weeks ago to make Baby Sisters trail jerky for this weekend's trip. So she sent me this huge honking roast. This is a 5lb whole muscle!
So what to do. My chili was running low in the freezer, I always put up a lot of small ziplocs when I make it to heat to use with hot dogs. I needed chili. After checking the pantry, its chili for supper.
First I trim the bones and grind a package of pork steaks (approx. 5 lbs.)
Yes its the old hand crank, I can't seem to find a 3/4" plate for the electric grinder. Doh! First I ran all the pork, then about 1/2 of the eye of round. No measurements, its Sunday. I am guessing it was about 2 1/2 lbs of beef and about 1 lb of pork.

I have made this so many times I can do it blind folded so here is the right way. <Chuckles>
I guess I am getting smarter in my old age. I can nearly always cook all that chili in my #8 dutch oven, but it gets messy with splatters all over, yet I always do it. Today I pulled out a #12 and the stove and floor is still clean..... Go figure....LOL
So I gave less than 4 pounds of pretty ground pork sitting here, Alwasy now my first thought is Pop's breakfast sausage and it has been awhile!

The above are some new waxed paper casings I am trying..... Oh come on thats funny! I didn't have any blow outs!
Well of course we had to taste it....
That was my Sunday afternoon. I'll put some chili in the freezer for hotdays, and some breakfast sausage for breakfasts, and of course I still have 1/2 that eye of round, will probably do some more jerky for the deer hunters.
Pretty productive afternoon.
