Sunday decided to do some spare ribs. It was a little spur of the moment type thing. The rub was only applied a couple hours b4 smoking which is my own sweet and spicey. Last year I bought some pecan chunks and used that for the smoke. I have to admit it was pretty good, nice and suttle. The wife really liked the pecan to so bonus points for me

. They smoked for almost six hours @ 240. The sauce was KC master peice honey. After setting up the pics I relized there were none taken after they were cut up sorry. Hope you enjoy, I know I did, oh and the wife to

looks good..........so i take it you did not use either a 3-2-1 or a 2-2-1?

WD, I've never tryed the 3-2-1 or 2-2-1. I've just always smoked them till they were done.
 
I don't either Dude. It's a GREAT way to at least get to the point of a good rack of ribs for beginners, and some folk continue to use it. But after a few thousand slabs... you know how to do 'em.. I DO sometimes go to the oven in foil tho, time/PITA factor usually causes this.
