Sam's had some nice looking chops and I had a hankering for them. Quick cook on the kettle.

Simply seasoned with Cavender's and fresh ground peppercorns. Let them ride covered in the fridge all day while I frittered my life away at a local brewery.

Reverse sear.. let them hang out on the cool side for a beer or so and then seared them off.

Plated with some cukes, red onions with a basic greek vinaigrette and a squeeze of grilled lemon.

These came out perfect. And I love the flavor the grilled lemon brings to the game. Thanks for looking!
 
Cukes and red onions is one of my favorite sides.I usually do them with oil/malt vinegar,salt,pepper,garlic powder and a little dried dill.

Looks delicious. I grabbed those same chops from Sam’s, $8.99lb if I recall correctly, i seasoned mine with “Brazilian Steak” from Kinders, it’s a chimichurri style seasoning.

Any way you go with them those are really good chops.

Yes they are. I do love chimichurri, but struggle with repeatability. Just can't seem to make it even close twice.
That whole meal is right up my alley! Sam's has a lot of nice lamb in stock usually

I grabbed a boneless leg same day. Might be spinner cook coming.
