I'm smoking my brisket today.
Lets see how the wet aged brisket does. I left it in the original cryovac and paper wrapped in on 4/24.
Did a slight trim last night and a salt/pepper/garlic rub.
On vertical this morning. 225 with oak lumberjack pellets.
