Every 45 hit them with 1-3 apple cider vinegar and water..
At the 2 hour mark I will wrap
 
Wrapped with brown sugar, honey, liquid parkay, tiger sauce and some more rub.. ( sorry no pictures of this.. my assistant was napping!!)
 
1 1/2 wrapped 45 mins unwrapped to tighten up .. took the wrapping liquid., separated the fat , and put it in a pot on low heat to thicken and added my bar b que sauce and 1 Tbs of cayenne pepper and basted the ribs.. took the remaining sauce and starved it at the table.
