Prime rib was on sale for the holiday so the wife grabbed one to celebrate!!!!

Trimmed the ribs off and seasoned them up with Kinders blend and buttery steakhouse….

On the RT 1250 for the 235 smoke…..

Oh man about 2 hours in and a IT of 87…..yum!!!

Bingo IT 135…..time to rest….almost exactly 3 hours….. the ribs were a IT of 170…..they will be left overs….

Ok now the summer time part….. a garden fresh mater and mozzarella salad with fresh thyme and my wife’s lemon herb dressing…..

What can I say? That is just a beautiful meal. Excellent preparation, perfectly cooked, and a magazine quality presentation. you know me, beef, and fresh veggies...I'd be all over that in a heartbeat. Excellent job...again.

The prime rib looks killer.
Many thanks RS! The 235 with no sear, till 135 then rest or hold at 140 in the warming oven is my new sweet spot for PR....The last 6 PR's I've done have been this way and well the next 6....7...etc will be done this way!!!!

Thanks Ryan......Its called a single meal day....I helps skipping the two previous meals for sure! The sad thing I blinked a couple of times and the plate was empty.......

Smoking a small PR like this results in very little drippings.... I often use the rib bones and simmer them for 8-12 hours for the beef broth, but the below is a quick and easy version. Note the minors beef demi is optional, my wife got some so I put a bit in for extra beefy richness.

Au Jus....
3 cups beef broth
6 Tbsp soy
1 Tbsp Worcestershire
1 Tbsp better than beef base
1 Tbsp better than veg base
1 Tbsp minors beef demi
A sprinkle is onion & garlic powder
1 Tbsp of sugar in the raw.....
Simmer for 15-20 min....

Corn on the cob isn't normally what you see with PR but its a perfect match. PR doesn't have to be fancy....LOL
