made another batch of hamburger summer sausage. simple recipe made with the hamburger, garlic powder, liquid smoke, morton's tender quick, mustard seed, mustard powder, onion powder, black pepper, i used lemon pepper this time.
this batch i added a little brown sugar just for something different.
mix everything together, let sit in the fridge for 3 days, mixing it up once a day, form into loaves.
i smoked without the tinfoil wrap for 1 hour at the lowest 160 setting using hickory pellets, then wrapped in foil, bumped the temp up to 200 and went to the internal temp of 160, took less then 2 hours to get there. when up to temp, let cool for a bit then put in the fridge still wrapped for at least 12 hours.
pretty good tasting as people always want more made. easy to adjust the recipe to a person's own taste.

That's classic ! It looks fantastic . Perfect cooking method for Tender quick also . My Mom still makes it every year for Christmas .

thank you! i enjoy it every now and again and so do family and friends, not to hard to make, just have to do it.

Very nice tbern! Sausage making does not have to be involved....simple loafs like you just made are easy and really tasty!

thank you Chris! i think it picks up a little better flavor the longer you leave it wrapped up after its done cooking and just cooling in the fridge.

Interesting and probably a good entry point for someone new to it all, quick easy and tasty!
yes, very simple recipe and not much to getting to the final product, just some time needed. and like i said, the recipe could be easily adjusted to a persons own taste likings.
