Summer Sausage For A Friend

Friend in resort asked for a chub of SS so i just did 5lbs with Owens BBQ SS mix.
Stuff tomorrow.

How salty is theirs? I used a different brand last year (Excalibur) and it was a wee bit too salty. I have some deer meat waiting to be SS! :)

These chubs are the Owens BBQ SS Mix.
I just finished using up my 500 fibrous casings i bought from Edgewood locker in Edgewood Iowa when i was at their store. Yikes

Room temp hang for an hour or so, going with apple smoke via the Amazn 6" tube.

Cut and taste. Always good with OBBQ Mixes.
