I have finally nailed the perfect bark on this 8.6lbs pork shoulder. 21 hours in my MES PRO at 225. So worth the wait.

Put one in the 590 last nite at 10:00 @ 230°.
It's at 194° now, haven't even opened the lid yet to see.

Tried to get an extra tray of char hickory in there last night, but wouldn't stay lite even after microwaving them. Oh well.
 
That looks amazing. I had to work an extra shift today so my own plans for pulled pork have to wait until next weekend. Thanks for filling my barbecue void. You are awesome.
