Stuffy old Sunday

Wow, was I stuffed. Great weekend of fun, football and, of course, a little smoking. Someone recently posted about stuffed mushrooms and I have been craving them since. Of course, couldn't just have them alone, so pulled out a half a pork loin to go with them. Then figured if I was going to stuff shrooms, might as well stuff the loin as well. Forgot to get the mushrooms ready early enough to smoke them, so no pics of them, but here is the loin i did...
First time I tried this, so kind of just winged it...here is the attempt at fileting it.

Forgot to take pic of ingredients...layered applesause, fresh cut apple, a layer of feta, fresh mushrooms and various spices. was looking forward to trying Jeff's rub I recently got (did like it quite well). I did brine the loin overnight and let this sit for a few hours before going into the chamber

Into the smoker..225-230. Sucker went for about 4 hours. Longer than I expected. Used the Amazn with apple pellets for this one.

Again, about 4 hours later...here she is taking a nice rest while the rest of the food is finishing up.

Here it is cutting off pieces. I must say I expected a little better look but, frankly, it is the taste more than the look, right?

And the final plate...and I couldn't help but include a piece of Bearcarver Bearcarver special cornbread. Man, do I love that stuff.

Have to say that this was one tasty, tender and juicy tenderloin. Will certainly try again.

Thanks for the comments and likes. It was very tasty, although I don't think I will do that combo again. Not only was everything stuffed, I was too afterwards, and this was one rich dinner. Appreciate the feature too, Al. Humbling.
 
Like! I dig the idea of feta though with apples. Might have to try that one my self. Never thought of it before personally.
 
I'll have to try this. Wonder how Feta would do for stuffing chicken on the grill, have you tried that?

I never stuffed a chicken. I cannot imagine it not being good, but I really like feta. I even put feta on my doctored up pizzzas. Give it a try, would like to know what you think.

I might have to the next time I see some boneless breast on sale. I was thinking feta spinach stuffed chicken wrapped in bacon..

Terrific looking meal JW. I've made Bear's cornbread a couple of times, it's excellent!
 
Thanks, Denny. As for Bear's cornbread, I make a big batch and freeze what makes it past dinner. Always some in the freezer and microwaves just perfect for a quick bread for dinner.
