Hello all,
I know I've probably asked or read about this before but I purchased a tube for my CABELAS 11# stuffer ( I know, "you get what you pay for", my wife already told me ALOT!! LOL) anyway it is a 3/8" tube for slim jim type 17mm casings. but there ain't no way anything is makin it through this tube other than water ! what type of stuffer does this work with ? I tried using my grinder but it doesn't fit. My wife loves the kind of snack sticks she gets at the local butcher and that is the correct size, once I figure this out I can work on getting the flavor and "ZING" like theirs has. TIA for any info
 
How fine of a grinding plate did ya use? When you crank the handle does it just stop when it hits the meat?

I've had the Cabelas commercial grade stuffer with motor for 12-13 now. I only make sausage with 32-35mm hog casings, or bigger, these stuffers are notorious for ruining the gear mechanism when attempting to push thru small casings. RAY

I use it for that size also and never had a problem but I think its just not strong enough to push through that small hole
 
I'm afraid it will need too much water and ruin the batch, this tube is TINY
I use a Jerky Cannon for sticks, I usually only make 5 pounds at a time. I used it to make sausage for years. They are a cheap solution to your problem IMHO

I tried it on my cannon didn't work there either, got so mad I sold the damn cannon !! LOL
 
The 5lb lem stuffer does a great job with the 3/8" tube as long as you add about 5-7% water by weight.
I've heard people say they can't make them on the 15 or 20 lb lem though because it's too much pressure.
 
Take Richie's advice and get a jerky cannon. If you try to force the gears you'll be in the marketfor a new stuffer, there's nothing "commercial Grade" about them, they are made for Cabelas by Weston. There are stuffers made here in the USA that'll do the job, you really pay a price for them. RAY

That is a sweet looking sausage stuffer from F.Dick but at that price, even on VALENTINES DAY I don't think my wife loves me THAT much! LOL!!
 
Look up Bearcarver Bearcarver step by step index. I think he has caseless meat sticks in there that he rolled by hand without using casings, it does work just takes a little time

A 5 lb LEM stuffer is your best bet for stuffing small snack sticks. I did a review on it a while back....

Everyone of those stuffers is made in China so you get what you pay for ! Now as far as the F Dick stuffer you only live once ! After all it is Valentine's day so treat yourself right and cross your fingers that your Wife doesn't put you in the meat grinder....lol

This may help ... As others said.. add a little more water .. but also ... let the meat come to room temp first ... then add water mixing it up while meats warm and then go to the stuffer ....

Get a 1/2" tube (stainless not plastic) and try those casings. No one believes me but I've had 16mm collagen on it (really tight but it worked). If that doesn't work get some 19mm casing. Perfect fit on a 1/2" pipe. Your wife probably won't notice 2mm ;-)
Your mix will still have to be pretty wet, and I think 70/30 slides through easier than 80/20, but that could be my imagination. I use a Gander Mountain (AKA LEM) with plastic gears no less, and you just have to take your time and not force it. I can't imagine trying to stuff through a 3/8 tube....

I have used the Grizzly stuffer for about 10 years... Before adding meat, I lube the inside of the container with Crisco and lube up the o-ring with Crisco... It stuffs meat EASY with it all lubed up... I made a 1/2" OD tube to do sticks.. It works well when lubed....
