Had some time this morning so I put together a stuffed pork loin.
First I made some Soused Apples from AmazingRibs.com with Crown Royal Vanilla and ancho chile powder. I then opened a pocket in the pork loin with a knife and stuffed the apple mixture in with gouda cheese chunks.
Next was the bacon weave which I covered with a layer of Jeff's Original Rub. I rolled it and cooked at about 300° for 2 hrs finishing with the families own Maple Syrup touched up with chipotle powder.
We served it with fresh steamed green beans, B-reds buttered with parsley. Also an asparagus, bell pepper, onion mix seasoned with butter and Saxon Tropical cooked in a foil packet with the pork roll.
