I agree 100% with you on the lack of flavor that most commercial pork loins have and refuse to cook them any way other than stuffed as you did. Depending upon my mood there's a variety of stuffings that I might choose from including a couple quite similar to what you did. More often than not some type of fruit is in the stuffing as it matches so well with the pork. Two of my favorites are built around an ancho and blackberry sauce and a fig, shallot, and balsamic jam.
