On deck for tonight a stuffed poblanos and ABTs.
Poblanos: Roasted, pealed, and seeded.
Filling: Pulled pork, Mexican shredded cheese, Meat Mitch sauce, hot honey bbq rub, sautéed onions and garlic.
Wrapped in bacon.
ABTs: sliced jalapenos, seeded (finally got some good ones with heat and flavor)
Filling: leftover poblano filling chopped fine with extra cheese added.
Wrapped in bacon.
Smoking both at 230 for about 3 hours, poblanos got a 15minute head start.
Side is TBD but leaning towards sliced polenta smoked with cheese on top.
