Wanted to say thanks to everyone for the help on stuffing the loin this weekend.  I ended up stuffing it with jalapenos, a little cream cheese, pepper jack cheese, sun dried tomatoes, and bacon.  Only took about 3 hours which surprised me and actually caused me to over cook it just a little.  But with no further ado here they are.

the cream cheese did pretty well. I didnt use a lot and tied the ends tight. glad I used it because it cut the jalapeno spice nicely.
