Having fun trying some new things out of necessity. The other day it was Peri-Peri, today it’s a nice pork loin stuffed with salted spinach and ghee. After patting it dry I rubbed with salt, pepper, dried thyme and some rosemary. Stabbed a hole down the middle and stuffed. Onto the smoker till medium (my wife’s request.). Tasted pretty good, not a show stopper, I liked the clarified butter and green in the center, some good moisture and flavor. Something to build on! Thanks for your time!
