Stuffed Loin….spinach and ghee

Having fun trying some new things out of necessity. The other day it was Peri-Peri, today it’s a nice pork loin stuffed with salted spinach and ghee. After patting it dry I rubbed with salt, pepper, dried thyme and some rosemary. Stabbed a hole down the middle and stuffed. Onto the smoker till medium (my wife’s request.). Tasted pretty good, not a show stopper, I liked the clarified butter and green in the center, some good moisture and flavor. Something to build on! Thanks for your time!

Something to build on!

Absolutely beautiful but you hit the nail on the head with this comment. You try something new and it may fall short of expectations but you have a solid foundation to build on for the next attempt.
