Stuffed Bacon Wrapped Pork Loin

Hi everyone! Had a little fun today and a tasty dinner!

This is a recipe that I developed from scratch over the last few years though the rub is a recipe from a site called Smoked Meat Sunday.

Chop up a jalapeño pepper and mix it with 6 oz of cream cheese and half a cup of sour cream.

I sliced the pork loin twice horizontally almost the whole way through creating 3 “flaps” connected by a “hinge” at the back.

I then sprinkle rub in between the flaps and spread out the filling.

Fold up the loin and insert toothpicks to keep it from falling open.

I then wrap it with bacon to keep the filling from all cooking out.

On the smoker at 180 with a smoke tube filled with competition blend pellets and cherry wood chips for 2.5 hrs.

After 2.5 hrs I put it in a pan with about 1/4 inch of apple juice in the bottom and cover with tin foil. I then stick it in the oven at 275 until it hits 145 IT.

While it was in the oven I mixed up a batch of Bloomin’ Onion Petals using @gmc2003 recipe from his post Bloomin’ Onion - Kettle Style for the batter.

I then put the loin on the kettle grill at high heat for a few minutes to crisp up the bacon

Looks pretty tasty!

I have not seen the loin cut like that before. Its pretty creative and gives me thoughts of perhaps two different fillings! Great job!

My first thought was something spicy on one side and something to balance the spice on the other side.
