Strip loin for pot roast?

Sooooo.... the question in my mind is this. Have any of you crazy bastards (or bastardettes) ever turned a hunk of strip loin into pot roast or high temp pastrami? I'm the crazy sob that's done ribeye loin into pot roast (yep, it's really fine) but I've never done its ugly leaner and less tasty (my opinion only) cousin that way. Does it work? Kinda wanna try a hunk of pastrami taken all the way to pull temps.

Its a bit too lean for pot roast ?
I would cook it slow and low for RB ?

Hmm. I guess most any cut can get made into pot roast. I've done it when a rib roast was less expensive, too. Give it a whirl.
I like strip loin. Miss the days of getting prime for under $10 per #.
My current favorite for pot roast or soup is a nice shank. Can still get that for ~ reasonable

Makes great ground beef and meatloaf too .

Lol, I haven't my friend. I'm a strip snob. It's my second to least favorite 'premium' cut so I've rarely bought it at all. Thanks for the links. I can get it on sale this week so I think I'm pastrami bound if I can find time.

You know I'm yanking your chain . Crock pot wouldn't be the first thought .
Never liked a strip steak , and never bought any until the price dropped during Covid .
This will " un-snob " anyone , $2.99 a pound if it's to small to see .

Then they had them for around 6 bucks a pound . I bought 7 . Ground up most of it , but also did that crock cook above and smoked whole and sliced thin .

I think it would make great sliced pastrami . You talked about taking it to shred stage ,, not sure about that , but you could do both and see . Hey you can't ruin it .
If you've heard of petite tenders , it's a great cut of beef . Comes off the shoulder but it's lean . Super tender though . Normal use , medium rare .
