Cooking 3 slabs of spares this morning. Open up the grill 2 hours into the cook to add my meatloaf and noticed 2 of the slabs have a greenish/brown color oozing out of the ribs at a certain spot. Checked the inside of the lid to make sure nothing was dripping down and its clean. Any idea what this is?

Are you sure there is no creosote on the ceiling of the smoker that could get hot & drip down on the meat.

If it is just those 2 spots I think I would not eat those 2 ribs, unless your sure that it's not coming from the inside of the ribs.

Did you inject the ribs with anything?

I have never seen this before unless it was creosote dripping from the ceiling.

Hopefully someone will be along soon to give you a better answer.

That has happened to me before. It was a drip from the ceiling. I pulled that off of the rib and still ate the rib. I did not notice any difference in taste and I did not die or get sick. You should be able to pull the substance off of the rib and see the rub still under it which would lead me to believe that it came from above and not inside the rib.

I'd be surprised if it's Creosote, but you never know. I have a WSM and the lid vent is open 100% at all times.

I did dab it off with a paper towel and when I pulled them an hour later to wrap in foil they were clean. Thanks for the reply.
